What is Couscous?

Couscous is a traditional staple food from the Maghreb region, which includes countries like Morocco, Algeria, Tunisia, and Libya. It’s made from crushed durum wheat semolina that is moistened and tossed until tiny granules form.

These granules are then steamed over a pot of boiling water or broth. The resulting product looks like small grains, and it’s often mistaken for a grain itself, but it’s actually a type of pasta.

How to Cook Couscous

  1. Bring some chicken or vegetable broth to a boil in a medium pot.
  2. Add some salt and some olive oil or butter if desired, then add the couscous. (1-1.5 cups couscous to 1-3/4 liquid).
  3. Take the pan off heat, cover, and let cook for 5 minutes. Uncover, then fluff the couscous with a fork.
